Makes 24 truffles
1 cup semi sweet chocolate chips divided
1 pkg. Cream cheese - 250 g at room temperature
1/2 cup icing sugar
1/2 cup graham crumbs
1 tablesppon vanilla
pinch of salt
Beat softened cream cheese until smooth
Add icing sugar, graham crumbs, vanilla & salt
Blend well.
Melt 1/2 cup of the chocolate chips in top of double boiler
or microwave until smooth, add to cream cheese mixture.
Then add remaining 1/2 cup of chocolate chips and mix in.
Cool in freezer until firm, about 15 minutes.
Shape into small balls and roll in coconut.
Keep in frig for an hour or until ready to serve.
They look nice in small cup cake papers.
