    This week I made some

    Bucket Pickles

    4 cups granulated sugar
    2 cups white vinegar
    2 Tbsp. coarse (pickling) salt
    1 tsp. tumeric
    1 tsp. mustard seeds
    1 tsp. celery seeds
    1 large red pepper, seeded and cut in slices
    1 large green pepper, seeded and cut in slices
    1 large Spanish onion, sliced
    5 pickling cucumbers with peel, sliced thin

    Measure the first 6 ingredients in 4 quart (4L) ice cream bucket. Stir.
    Add red pepper, green pepper, and onion. Add more or less cucumber, depending on size, to fill bucket up to level of liquid. Let stand about 2 hours. Stir. It will shrink down a bit so you may be able to add more cucumber slices. Cover. Store in the refrigerator for up to 6 months. Makes about 2 1/2 quarts (2.5 L).

    Have not tried this recipe yet but may do some of them too. Have been told they are delicious and easy to make.

    No Nonsense Pickles

    16 cups of cucumbers, sliced lengthwise
    1/3 cup of pickling salt
    1 Tbsp. tumeric
    1 Tbsp. mustard seeds
    1 Tbsp. celery seeds
    5 cups sugar
    3 cups vinegar
    3 large onions
    3 ripe peppers
    1 quart (4 cups) water for soaking cucumbers

    Peel and cut cucumbers in lengths. Put cucumbers in water and a layer of ice cubes on top, then add salt. Let stand for 3 hours. After 3 hours drain. Add peppers and onions. Mix vinegar and spices with cucumbers, peppers and onions, then bring to a boil. Bottle in sterlized jars. Makes 5 large jars.
