Banana Cake
Preheat oven to 350*F
Have all ingredients at about 75*F.
Sift before measuring 2 1/4 cups of cake flour.
Resift with : 1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 cups sugar
2 eggs
1/2 cup butter
1 cup lightly mashed bananas
1 tsp. vanilla
1/4 cup yogurt or buttermilk
Cream butter. Add the sugar gradually. Cream until very light. Beat in one egg at a time. Lightly mash bananas, add vanilla and yogurt or buttermilk.
Add the flour mixture to the butter mixture in about 3 parts, alternating with the thirds of the banana mixture. Stir/beat the batter after each addition until smooth.
Bake in loaf or tube pan for about 1/2 an hour or until done. (The recipe said 1/2 an hour but I am thinking it should have been 1 1/2 hours)
(I added extra spices like nutmeg and cinnamon)
Moist Banana Loaf

Add 2 eggs - blend
1 1/2 cups flour (cake and pastry)
2 tsp. baking powder
1/2 tsp. baking soda
Choice of spices (vanilla and cinnamon, etc)
dash of salt
4 Tbsp. milk
(Blend in the above 5 ingredients)
Crush and cream 3 bananas, add last. Bake at 350*F until done. (golden brown) Dont keep testing.
Icing: butter, icing sugar and milk.
