    This year about 30 pounds of elderberries have been picked and processed into juice.About two pounds of berries make one litre of juice.The berries are not as prolific this year due to a long drought. To date 14 litres have been pressure canned. Annotated pictures depict the process.

    I have an elderberry bush that I planted from a cutting. (Hubby thinks I should make more plants but they would be for the birds. They love them and get the berries before I do.)

    This year the one bush did very well. When I finally realized that the berries were ready, I harvested and processed 16 cups. I am getting lots of blackberries so will do some into juice and freeze some for eating throughout the Winter.
