I have always considered shortbread cookies to be very unhealthy. I maybe wrong but they do contain a lot of fat and sugar and no mentionable nutritious ingredients. Do you think they are wholesome?
Apple Spice Cookies is a healthy alternative that is good for breakfast and snack.
Ingredients:
1/2 cup organic coconut oil (softened slightly by heating in a pan)
3/4 cup sucanat or coconut sugar (buy from the health food store -- brown sugar is nothing more than molasses added to white, highly refined sugar)
2 happy organic eggs
2 cups spelt flour
1 tsp baking soda (aluminum-free)
1 tsp cinnamon
1/2 tsp cloves and nutmeg
2/3 cup apple juice
1 cup chopped walnuts
1 cup shredded apple
1 cup raisins (soaked for 20 minutes in water to soften, drain well)
1 heaping tbsp of love and good intention
Method:
Preheat your oven to 375F. Combine the coco oil and sugar in a blender. Add the eggs and combine fully. Slowly add the flour, baking soda and spices, combine until smooth. Add apple juice and stir again. Stir in nuts, apples and raisins until well combined. Drop cookies onto sheet with a big spoon, make sure you grease your pan or line with parchment paper. You can pack them close together because they don't expand very much.
Bake for 12 minutes. Let cool slightly and then of course, enjoy!
